Periklis and Stergios Tatsis turn the little-known grape Pamidi, hailing from Eastern Thrace and grown across Macedonia, into something quietly wild. Light to the eye and smacking on the lips—red fruits abound, think cherry and cranberry, with a touch of electricity on the tongue and briar from the nose.
