Hatzidakis Winery began in 1997, when Cretan-born oenologist Haridimos Hatzidakis and his wife, Konstantina Chryssou, left their jobs at a neighbouring winery to start their own. Konstantina’s family owned a vineyard at Pyrgos Kallistis that had lain untended since the 1956 earthquake and beside it was a cave, which the couple turned into a tiny cellar, or canava.  That revived plot became the first certified organic vineyard on Santorini, and every parcel the estate has farmed since follows the same principles. Haridimos became known for his hands-off approach: native yeasts, no filtration, and a conviction that a great wine is made in the vineyard rather than the cellar. His belief in the island’s old, ungrafted vines helped change how the world sees Santorini wine.

Haridimos died tragically in 2017, and his daughter Stella, her brother Antonis, sister Ariadne and their mother Konstantina have carried on his work. The wines are still made in a cellar dug entirely underground on the road between Pyrgos and Emporio and remain the most sought after among Santorini's lauded and increasingly scarce output.
