Bayiri: a Turkish word, bayır, meaning a slope, but also fallow or uncultivated land. With a label inspired by blackout poetry, where something is removed and something else emerges, Giannis Spanos introduces us to Bayiri.

The winery behind this project is based in Larissa. Giannis, an agronomist and oenologist with a real passion for grapes, soil and, by extension, wine, follows organic farming practices. Across 12 stremmata (1.2 hectares) of vineyards, at altitudes of 150–300 metres and on clay and sandy soils, he grows Chardonnay and Syrah. For Xinomavro, he works with other producers, selecting grapes sourced from the foothills of Mount Olympus.

Following the idea behind the label, winemaking too becomes a process of transformation, in which grapes turn into something else without losing touch with where they began.
