A blanc de noir made from Xinomavro, possibly Greece's noblest red, cut loose from its skins the moment it's pressed and vinified as a white. Biodynamically farmed and fermented on native yeasts before a year of lees contact. Pale straw gold with a savoury, almost briny nose of yellow plum, dried white flowers and anise, this carries real spice and structure for a white, with a tense drive that hints at its red-grape roots. Unconventional, tightly wound and genuinely singular — proof that Xinomavro can shape-shift into just about anything.
