Augoustiatis and (the even rarer) Katsakoulias, from a single vineyard just alongside the winery in Koiliomenos, form this dynamic rosé showing notes of cranberry, kefir, loukoumia and flint–there’s jasmine also, maybe a touch of lavender, of watermelon granita, of something savoury. A mid-palate tackiness is saved by a noticeable salinity and the persistence of the acid to thrash against the myriad elements so that it all bounces around the mouth and nothing sticks, like a wind kicking debris in a fierce storm. Serve extra chilled with salty mezze.
