A spice-box and wild card cuvée blending white grapes grown across the foothills of Mt. Olympus with Assyrtiko from Damasi; expect a little tannin balanced with mandarin fruits, ginger and leather. Will have you thinking of the wines imbibed centuries ago by our himation-wearing ancestors, wielding ceramic cups and arguing over the merits of democracy.

MADE HOW: Spontaneous fermentation, skin contact 22 days with maturation in 300 L oak barrels for 8 months
