Biodynamic old vines, wild yeasts and a stint in American oak, this is a fruit-bursting and wild-card love letter to Xinomavro, one of Greece’s most important noble varieties: strawberry, cherry and plum jump out of the glass, chased by fennel, black tea and a whack of spice. Look for a little mushroom, leather & bramble. Save it for charred meats and slow cooked stews. Decant on serving.
