From Apostolos Thymiopoulos — the Xinomavro whisperer — comes a landmark single vineyard wine. The Kayafas vineyard sits at just 180 metres near Trilofos, where 44-year-old vines root into limestone laced with slate and granite. It's a warm spot, but sea breezes and cool air off Mount Vermio stretch the season into a late harvest, building depth without losing freshness. Forty days of maceration, 20% whole-bunch fermentation, and a year in seasoned French oak yield a deep ruby wine with violet highlights and a nose of red currant, black cherry, lavender, and nutmeg. Full-bodied and ripe-tanned with bright acidity, it finishes long and layered. Cellar it for a 8-10 years (if you've the patience) and drink on a holy holiday.
