Limniona and Assyrtiko. Two varieties you probably wouldn’t expect to find together in a sparkling rosé — and yet, here they work surprisingly well. Limniona brings the red fruit, Assyrtiko brings the acidity, and 18–24 months on the lees give the wine the texture and depth it needs.
