Fotinos is a tribute to Monemvasia, the historic grape once shipped from the medieval port of Monemvasia and now almost entirely at home on Paros. Grown in sandy granite soils and trained low to the ground (the traditional aplotaria method) to survive the island's fierce winds, the grapes are vinified separately with no maceration and just gentle pressing before blending. The wine pours a striking deep gold with copper reflections, opening with lemon peel, mandarin, apricot, and quince, then shifting into something wilder: fennel, crushed thyme and hay. On the palate it's low in acid but far from flabby, carried by a mineral backbone with pear and chamomile leading to a dry, oxidative and herbaceous finish. Rugged yet refined.  Spicy yet floral.  Drink now or forever hold your peace.
