Some love stories start with a glass of wine. Nicolas and Marie-Astrid Bourget's started with an island. In 2019, the couple traded their restaurant life in Nantes for the sun-bleached hills of Paros, chasing a hunch that this small Cycladic outcrop held something special. They weren't wrong. Between the granite, gneiss and limestone underfoot and the northern wind, Paros turned out to be less a backdrop and more a co-winemaker. Domaine Myrsini was born from that hunch — part vineyard, part love letter, part very ambitious life decision.

The Bourgets don't so much make wine as get out of its way. Their 20 stremmata of organically farmed vines are joined by a growing patchwork of rented old-vine parcels tucked into the island's mountains, still tended the old-fashioned way — pickaxes, bare hands, no shortcuts. Everything ferments with wild, indigenous yeasts, ages on its lees, and gets bottled unfined and unfiltered, with only the slightest of sulfur added at the very end. It's a hands-off approach with a very hands-on backstory, and it shows: these are wines with texture, salinity, and a bit of edge — much like the island itself.

The lineup reads like a love letter to Cycladic grape varieties: Monemvasia, Assyrtiko, Mandilaria, Vaftra, Vilana, Roditis, each cuvée tuned to a different note of the Parian terroir, from the salty freshness of the coastal parcels to the deep colour and grip of fruit grown high in the mountains. There's a pet-nat, a textured rosé, structured reds, and mineral-driven whites, with new small-batch experiments arriving as the Bourgets expand their web of old-vine collaborations. It's a winery still very much writing its own story, one Parian vintage at a time.
