Nees Rizes (or New Roots) is exactly what it sounds like — the Bourget family's declaration of intent on Paros, crafted from ancient, ungrafted vines (50 to 150 years old) scattered across small, mostly north-facing plots up at 500 metres.
Mandilaria, the wild child of the Aegean, brings deep ruby colour and savoury depth without the grape's usual tannic bite, while rare, ungrafted Vaftra layers in aromatic mystery and dark fruit complexity. Vinified as a glou-glou wine — part whole-cluster, part crushed, semi-carbonic — it trades brute structure for pure drinkability: a hazy, deep ruby glass full of blackberry, cherry, violet, fig, and dried tobacco, with a crack of black pepper running through it. Light-bodied, juicy, and gently tannic, with soft acidity carrying a long, savoury-spiced finish — it's proof that Mandilaria doesn't have to be monolithic to be serious.
