The Kyklops Pet Nat 2024 is 25-year-old Vilana from Paros' calcareous, limestone soils, hand-harvested and made à la volée — fermented in steel, bottled before it finishes, and hand-disgorged for a wine of pure, living freshness. Light, honeyed, and citrus-bright, with fine natural bubbles, crisp acidity, and a saline-meets-floral mineral finish. Organic and biodynamic, with minimal sulfur. Made for aperitifs by the sea, salads, snacks, and warm afternoons that call for something joyful.
