The Unscathed Wines are a highly notable effort on the part of the cooperative to create lively, authentic wines in small, carefully-tended productions.

Unscathed Wines is an umbrella name for three different labels: Vounitis, Profitis, and Hermitis, each reflecting the individuality of the terroir of the region they come from. The word "unscathed" (áthiktos) comes from the ancient Greek verb thingáno, meaning "to touch" — with the negating alpha prefix, it comes to mean "untouched by human hand," capturing in a single word the entire winemaking philosophy of "minimal oenological intervention."
