Giannis, an agronomist and oenologist with a real passion for grapes, soil and, by extension, wine, follows organic farming practices. Across 12 stremmata (1.2 hectares) of vineyards, at altitudes of 150–300 metres and on clay and sandy soils, he grows Chardonnay and Syrah.
