{"title":"Hatzidakis Winery","description":"\u003cp\u003eHatzidakis Winery began in 1997, when Cretan-born oenologist Haridimos Hatzidakis and his wife, Konstantina Chryssou, left their jobs at a neighbouring winery to start their own. Konstantina’s family owned a vineyard at Pyrgos Kallistis that had lain untended since the 1956 earthquake and beside it was a cave, which the couple turned into a tiny cellar, or \u003cem\u003ecanava\u003c\/em\u003e. \u0026nbsp;That revived plot became the first certified organic vineyard on Santorini, and every parcel the estate has farmed since follows the same principles. Haridimos became known for his hands-off approach: native yeasts, no filtration, and a conviction that a great wine is made in the vineyard rather than the cellar. His belief in the island’s old, ungrafted vines helped change how the world sees Santorini wine.\u003c\/p\u003e\n\u003cp\u003eHaridimos died tragically in 2017, and his daughter Stella, her brother Antonis, sister Ariadne and their mother Konstantina have carried on his work.
